Probably the easiest way to eat beans is to make a bean and vegetable salad. Here is the recipe for a southwest and spicy version of a bean salad. Mix together 1 (14oz/~400g) can of black beans and 1 (14oz/~400g)) can of chickpeas (or any 2 cans of the variety you prefer). Dice up about 1 cup (~150g) of bell peppers in whichever color you like. Next, add in a can or cup of cooked corn kernels. For the dressing mix together 2 tablespoons or about 30mL of olive oil with a couple large drops of a hot sauce of your choice. Taste and make sure you like it before you drizzle it on your salad. You can also garnish with ground black pepper or cilantro if you like.
Healthy lunch recipes need to be both fast and healthy, and being inexpensive also helps too. That is why beans are a wonderful choice because they are so healthy, inexpensive and versatile. If you buy them dried and cook them yourself they won’t be as fast, but you can assure that the sodium content will be lower (and therefor a little more healthy) and even less expensive than the canned variety. But if you are really going for speed in your lunch recipes, buy the canned versions of your favorite beans.
